Head Chef Sherwin Poon leads Scotts Grill with a vision of "Unreasonable Hospitality". Honed at France’s Villa Augusta and further refined in Singapore’s French fine-dining scene, he views cooking as a daily ritual of restraint.
His philosophy focuses on the art of simplicity and honouring exceptional produce.
For Chef Sherwin, the goal is to move every guest, proving that when execution is precise, simplicity becomes the highest form of indulgence.
